Healthy Cooking with Honie (Hon) Ann Peacock: Groovin' With Greens

All alumni, parents, and friends are invited to join the UVA Club of Charlottesville for a presentation of healthy cooking with Honie Ann Peacock.

This cooking/coaching session will feature an evening of learning about healthy food choices and cooking. The focus will be on creative cooking with greens from Bellair Farm, a local organic farm in Charlottesville. The class will celebrate Autumn’s bounty of locally grown greens with delicious ways to prepare them without meat! Be pleasantly surprised and even delighted as you learn Hon’s shortcuts and healthy strategies.

We will prepare two recipes during the event. Find the recipe for Hon's Ginger Greens Saute here, and the recipe for Hon's Kale Salad and Dressings here. Note: we'll only create the lemon vinaigrette dressing during the event.

Hon was a health food pioneer in NYC in the ‘60s. Hon’s Buns, her trademarked organic, vegan, wheat-free, oil-free high energy baked goods line in 1990 is an example of Hon being a visionary. Being a single mom since her daughter was an infant, an HR manager in the corporate world, and an activist in the women’s movement and women’s professional organizations led Hon to develop a set of creative strategies and tools to live the healthy lifestyle she was passionate about for her and her daughter even through a super demanding life.

A serial social entrepreneur, Hon left the corporate world to lead a series of small businesses including a social enterprise in culinary arts which was a new paradigm of a school-to-work initiative. Piloted at a public HS in the Hell’s Kitchen neighborhood, she was invited to run the food service at Riverside Church after being covered by ABC Eye Witness News. She and her team, including students, catered 700 events in 24 months in addition to running the café 6 days/week. In addition, she and her students ran 3 Greenmarket stands as part of their training as budding entrepreneurs.

Hon is passionate that food celebrates life and health! It must therefore grow in healthy soil [in small, bio-diverse family farms] without chemicals. Hon is equally passionate about food being delicious and made with bold flavors including: Mediterranean, Indian, Middle Eastern, Mexican, and Japanese flavor profiles. Since Hon relocated to Cville in 2015, she has been coaching families on cooking more healthy food at home that fits into their busy lifestyle, mentoring small women and minority-owned social enterprises [CIC and VENTURE LAB], and coaching community-based NPOs.
